Five weeks ago, I decided to make Calamansi Muffins. With the help of Pepper.ph, I was able to come up with my own mini version - and boy, was it good! It brought me back to Boracay where I happily munched the afternoon away at Real Coffee. If you've been to the island, I'm certain you're familiar with the place and have probably found yourself craving for their muffins days after your visit; but if you haven't, well, then you better book yourself a flight right now, 'cause you're missing a huge chunk of your life if you've never stepped foot in Boracay (and tasted those darn muffins)!

But if life's a little too hectic to be flying off somewhere, why not try making your own muffins for now and save Boracay for a later date? Sounds good? I think so, too.

Here are the ingredients you'll need:
1/2 cup butter
1 cup sugar
2 pcs eggs
1 1/2 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/4 cup milk
1/4 cup calamansi

Steps:
1. Mix the dry ingredients (flour, baking powder and salt) together in Bowl A.
2. Mix the wet ingredients (milk and calamansi) in Bowl B.
3. Cream the butter and sugar in Bowl C.
4. Add your eggs one at a time in Bowl C.
5. Pour the contents of Bowl A and Bowl B into Bowl C.
6. Make sure to mix it really well.
7. Grease your pan.
8. Scoop your mixture into your pan
9. Bake in preheated 160 degrees Celsius / 350 degrees Fahrenheit oven for 20 minutes.

With this recipe, I was able to make 18 bite-sized muffins.
