Savor the flavors of Pampanga at Food Exchange Manila, Novotel Manila Araneta Center from June 8 to 22, 2017!
Celebrate Philippine Independence Day as Chef Sau del Rosario collaborates with Novotel Manila Araneta Center to bring us Kanyaman Food Festival at Food Exchange Manila! For those who don't know, Food Exchange Manila is Novotel's buffet restaurant (which you can read more about in my previous posts: Celebrate Chinese New Year at Novotel, Go Gangnam K-Food Festival, and Novotel Manila Araneta Center Staycation).
As you can see, I've been to Novotel a couple of times already, so now that they're doing something about Pampanga, the food capital of the Philippines - and with Chef Sau, no less - I knew I had to be there.
But before the feast, we were treated to a colorful fashion show by Kapampangan designer Philip Torres!
Here are some of the dishes you can find from June 8 to 22 at the Kanyaman Food Festival:
Chicken Galentina
chicken, sausage, chorizo, spam, olives, green peas, eggs, chicken powder, cheese, cream, salt, pepper
Kinilaw na Tanigue
tanigue fillet, vinegar, calamansi, red onion, bell pepper, chili, cucumber, salt, pepper
Ensaladang Talong
talong, onion, tomato, coriander, salted egg, sour cream
Pako Salad
pako, prawns, salted egg, tomato, onion, watermelon, kesong puti
Tinapa Mousse
smoked fish, olive oil, garlic, onion, butter, white wine, salt, pepper, fresh dill
Buru and Steam Vegetables
buru hipon, fermented rice, sitaw, talong, okra, ampalaya
Tamales Pampanguena
rice flour, annato seeds, garlic, onion, chicken powder, coconut cream, salted eggs, salt, pepper, spring onion
Don't miss out on the pizzas, especially the Sisig Pizza!! It's so cheesy!

Duck Adobo

Lamb Shank Kaldereta

Pork Pochero

Beef Salpicao

Rellenong Bangus

Seafood Pinakbet
mussels, prawns, squid, garlic, onions, tomato, sitaw, talong, okra, ampalaya, bagoong
Kare Kare Macadamia
boneless pork belly, peanut butter, annato seeds, garlic, onion, coconut cream, truffle oil, macadamia nuts

But my personal favorite? The Prime Rib Bistek!
And of course, Chef Sau's Three Kinds of Roasted Pork Belly!
