The Philippine Culinary Cup was held last August 3 to 6, 2016, at the SMX Convention Center. "Now on its 7th year, the PCC takes on an even bigger role in providing the Filipino chefs an internationally-recognized platform to hone their skills and showcase their talents in the culinary field. A collaboration of the LTB Chefs Association Philippines, the Pastry Alliance of the Philippines and PEPGroup, Inc., it is a successful partnership that has clearly established the new standards in Philippine culinary competitions." The Philippine Culinary Cup is the most prestigious culinary competition in the Philippines, so it's a huge deal that Solejon bagged the award for Best Chef as well as six other medals - three gold, two silver, and one bronze. We had the privilege of trying her award-winning dishes through a seven-course degustation meal, which will soon be offered at Imperial Palace Suites in Quezon City.

Here's a look at Solejon's Saveurs d 'Or:

Cornet of Salmon and Tuna Tartare
Filo Cone, Mignonette Pearls

Chorizo-crab Tomato Fondue
Beurre Noisette, Chorizo Crisp, Sour Bread

Beetroot Balsamic Carpaccio
Cheddar Crisp, Baby Arugula, Orange

Seafood Paella Negra
Citrus-encrusted Surgeo, Stuffed Shrimp, Paella Negra Rice Cake, Bouillabaisse Sauce

Intermezzo
Basil-Calamansi Shooter

Duo of Chicken
Cranberry and Basil Roulade, Foie Gras-stuffed Chicken Mousse, Port Wine Jus

Chocolate Textures
Cold Mousse, Warm Espuma, Crystalized White Chocolate Soil, Microsponge

Mignardises

It was a truly magical dinner - definitely one for the books. The flavors and textures in each dish will surprise you. Everything was seriously amazing! I wouldn't mind having another go at this soon. Haha. Congratulations, Chef! :)
