Cocina Peruvia at The Podium

New branch, new dishes!



Last month, I met up with The KTG at The Podium Mall to try out Cocina Peruvia's newest dishes.

Peru is a land twice blessed: a bountiful coastline facing the Pacific Ocean and the rich mountain ranges of the Andes in the country's interior. Its multi-cultural heritage from the Spanish, Italian, African, Chinese, and Japanese settlers who made it home, infused its cuisine with the most interesting and diverse influences from all over the world. Combined with its own native Inca Indian character, it has made the country's culinary offerings a truly unique adventure in itself.

This beautiful nation in South America is home to many unique spices and endemic plants. Its signature profile comes from the aji panca and aji rocoto, purple olives, and many unique maize varieties that can be only found in Peru.

From the traditional grilled beef hearts in the Anticuchos de Corazon de Vaca to the premium tenderloin in Lomo Saltado. From the octopus, shrimps, mussels, and squid in a divine Ceviche Mixto to the country's classic comfort food fish stew, the Encebollado, and many more delicacies and dishes, both familiar and exotic.

It was my first time at their newly opened branch, though my family and I have already been to their Vertis North store a couple of times before. My dad fell in love with their food.. and take note, he can be difficult to please, but once he finds a favorite, he'll want to keep coming back every single week. Haha. I can't wait to tell him about these new dishes and I guarantee we'll be paying them a visit as soon as I do. :P

Ceviche Mixto
octopus, squid, shrimp, and mussels in aji rocoto and citrus juice

Mixto Anticuchos
grilled beef heart, salmon belly, and chicken thigh in skewes, served with chimichurri and aji anticucho sauce on the side

Mixto Patacones
fried bananas topped with shrimp, avocado salsa, and sofrito sauce, and salmon, mayo mix, parmesan cheese, and sofrito sauce

Chupe de Pescado
fish chowder with mussels, edamame, ricotta cheese, and cilantro oil

Gambas Con Saltado
marinated shrimp and bell pepper, sauteed in aji panca and oregano

Lomo Saltado
marinated beef tenderloin, sauteed with garlic, onions, tomatoes, fried potatoes, and lomo sauce

Adobo Peruvia
slow cooked pork belly in cream sauce topped with salsa creole

Pollo a la Brasa
chicken in aju panca and lomo sauce, marinated for 24 hours, and roasted to perfection

Linguine con Carbonara
cream-based pasta with aji amarillo, sautéed with seafood and garlic

Chifa Kale
rice sauteed with seafood, mixed greens, and rocota sauce, topped with salsa creole

Galera de Chocolate
baked chocolate tart with dark chocolate ganache, topped with blue chips and dried figs in rehydrated syrup
We tried a lot of dishes that afternoon but my favorites were the Chupe de Pescado, Adobo Peruvia, and Galera de Chocolate. I highly recommend you order them on your next visit!

I'm glad that a lot of people share the same love for Peruvian cuisine as more and more similar restaurants are opening doors in Manila. Cocina Peruvia alone has three branches and I hope they continue to branch out soon!
