He is also one of only two Manila-based chefs who were invited to speak at Madrid Fusion Manila 2016, the first and only Asian edition of the most important gastronomy congress in the world held annually in Spain.

This April, in line with Madrid Fusion Manila 2017's theme Flavors of the Philippines, Pan Pacific Manila is paying homage to our rich heritage of Filipino heirloom with a special themed buffet entitled "Cucina ni Lola." And who better to collaborate with than Chef Tatung!

Chef Tatung's straightforward Filipino dishes are perfect if you're craving for dishes you grew up with - dishes that your lola cooked for you!

Filipinos are naturally family-oriented, and summer is one of those times we usually come together and spend time with our extended families, eating at the same table and the same food our parents used to as kids. It is these culinary creations by our lolas that each Filipino holds closest to heart. Agree? Let's face it, there's nothing like lola's cooking! Here's a look at the buffet selection for Cucina ni Lola:

For appetizers and salads, they have items like Chicken Embotido, Lumpiang Sariwa, Ensaladang Ampalaya at Labanos, Salted Egg Salad, Atsarang Papaya, and Steamed Talbos ng Kamote, Eggplant, and Okra.

For the main course, you have to try everything. I mean it. Each one has its own personality and flavor, and will definitely remind you of home. I especially loved the Tinuktok and the Bringhe Rice!

If you ask me, the buffet is an absolute steal at Php 1,000! Don't forget to leave room for dessert! They have local fruits, suman, halo-halo, buko pandan, minatamis na saging at sago, leche flan, tablea biko, and cassava cake.

It was a feast fit for kings! But seriously, I would totally recommend bringing the family here. It's also perfect for foreigners who want a taste of authentic Filipino cooking. Nowadays, it's all about fusions and things like that, but I believe that we should never forget where it all started.

Chef Tatung also recently released a new book celebrating our national staple - rice. To tell you the truth, I can't leave without rice. Would you believe I used to eat rice with spaghetti? Don't judge me. Haha!

Rice to the Occasion features twenty recipes with beautiful photographs by Paulo Antonio Valenzuela, and informative notes from Chef Tatung himself. "Subtitled From Kanin to Kakanin: Recipes to teach kids to cook rice and other rice treats, the handy volume includes kitchen-tested recipes, from good old plain boiled white rice, to iconic favorites like champorado, puto, kutsinta, bibingka, biko, tamales, and more." Chef Tatung believes that "by allowing children to succeed in cooking, you teach them to not just develop joy, pride, and confidence in their work, but you also teach them another valuable lesson, which is humility - to not be attached to either success or failure, as nothing is permanent."

Rice to the Occasion is available at Fully Booked and National Bookstore. For orders and inquiries, you may call (02) 361-7491 local 811 or 838.
